How to Make Sushi Mark’s Summer Rolls with Sweet Chile Sauce
This Asian inspired recipe is one of my favorites. Light and refreshing the crisp vegetables paired with the succulent shrimp and crab stick with creamy Avocados combine to make for a tasty recipe that is perfect for a summer snack. I serve this yearly at my Superbowl party! Served with chilled sweet chile sauce and you have a hit!

How to Make Summer Rolls with Sweet Chile Sauce
Directions for Mark’s Summer Rolls with Sweet Chili Sauce
Start by heating about ¼” of water in a small sauce pan that is big enough to hold your sheet of rice paper. Place the cutting board on the counter top. When the water is warm dunk the entire sheet of rice paper into the water 4-5 times for approximately 6 seconds total. Allow the rice paper to drip off over the pan for about ten seconds, then place it on top of the cutting board. Next place the shrimp across the length of the rice paper. Top it with two fresh pieces of bib lettuce. Tuck 2 julienne cucumber slices on top of the bib lettuce, followed by the imitation crab strips. Sprinkle approximately ¼ cup of shredded carrots over the top. Some prefer more or less, just add the carrots to follow your desire for the sweet crunchiness that the carrots add to this recipe. Strategically place the fresh avocado so that there will be some in each piece of the sushi roll. Simple, right?
Presentation Tip: Serve these with Chili Sauce drizzled on the side on a festive plate. They present alone beautifully as well due to the opaque window effect that the sushi roll filling has when you gaze down at it through the rice paper.
Time to Roll:
Roll up by picking up the end of the rice paper closest to you, and rolling it away from yourself. Tuck the left side and then the right side of the rice paper up toward the center, and then roll the entire filled rice roll away from you until it is tucked into one neat little package. Do you notice how beautiful and appetizing this looks? The vibrant colors of the shrimp and veggies show iridescently through the rice paper for stunning party presentation. Now that your roll is complete slice it in half at a diagonal. Serve it with a generous helping of sweet chili sauce. This recipe is light, and refreshing; absolutely perfect for a hot summer day, or a weekend party. Don’t forget to set some aside for your own enjoyment as your guests will quickly devour these fresh delights!
