How to Make Sushi Rice

Sushi rolls require sushi rice, and preparing the best sushi rice takes a specific technique. Use this recipe below for the perfect flavored rice for any sushi roll recipe.

Tools Required for Recipe:

  • 1 Rice Cooker
  • 1 Colander
  • Sink with cold running water


  • 1 ½ cup Nishiki Rice (or a different medium grain rice)
  • 2 cups of water
  • 1/3 rd Cup Rice Wine Vinegar
  • 1-2 Tbsp sugar
  • A few pinches of salt

Directions for Making Sushi Roll Rice:

A rice cooker is one of the best investments that I have ever made for my kitchen. I use it all the time. If you are purchasing a rice cooker look for one that has an easily cleanable inner liner and a strong durable exterior for long term frequent use. Find one with a measuring system on the inside for easy use.

Presentation Tip: This rice will be used for the exterior for most of our Nori seaweed recipes so make sure that the rice is well rinsed, and is not overcooked.

For eight pieces of sushi roll, which will feed two people, measure out approximately 1 ½ cups of Nishiki medium grain rice. You can find this particular type of rice in most super markets and specialty food markets. Place the 1 ½ cups of rice into your colander and rinse the rice off with cold water for 2-3 minutes, making sure that the water rinses all of your rice by shifting the strainer around underneath the running water.

The rice will still be slightly cloudy. If you are able to use the sprayer on your sink as it can assist with guiding the water where you need it. Now that the rice has been rinsed it is time to add 2 cups of water and the 1 ½ cup of rice to the rice cooker. Turn the rice maker on and close the lid. The rice will need to cook for 15-20 minutes.

Once the rice has reached the appropriate sticky consistency remove the lid. Watch out for steam. Add 1/3 cup rice vinegar. Add the sugar; I start off with 1 tbsp just to see how it goes. Now it is time to add a couple of pinches of salt. Make sure to taste the rice so that you can adjust the seasoning to fit the sushi roll that you are making. Allow the rice to cool to room temperature before you use it in any American sushi roll recipe.
