How to Make a California Cream Cheese Roll

California Cream Cheese Roll are an American sushi favorite, and the actual reason why I decided to learn how to make sushi at home. This California cream cheese Roll recipe is known as cooked sushi as it contains precooked ingredients unlike many other traditional sushi rolls which contain raw fish. This cooked sushi recipe is incredibly easy to prepare, and always a hit.  I love this cooked sushi recipe because it combines tender crab with cream cheese, and fresh crunchy cucumber. This simple California cream cheese Roll recipe adds a real wow factor to any sushi night.

Cream Cheese for a California Cream Cheese Roll

Equipment Needed:

  • Sushi Mat
  • Sharp Serrated Knife
  • 1 Gallon Freezer Bag

Ingredients:

  • Nori (1/2 Sheet)
  • Sushi Rice (Prepared; One palmful)
  • Crab sticks (crab sticks, fish cakes)
  • Cucumber (Julienne, at least two slices to cover the length of the Nori)
  • Cream Cheese
  • Topping: 1 Tbsp. Toasted Sesame Seeds or Masago (fish eggs)

Presentation: Square black plates are always my favorite but you can really place these in a beautiful design on whatever type of serving dish that you prefer.

We will start off with ½ sheet of Nori, and Palmful of rice. Place the sushi mat inside of the gallon sized plastic freezer bag, this ensures that the sushi rice does not become embedded into the mat, and makes for easy clean up.  Lay the Nori seaweed square on top of the plastic covered sushi roll mat. Wet your hands thoroughly. Place a handful of sushi rice in the middle of the half sheet of Nori and gently spread out to the edges. Press down gently to ensure that the rice adheres to the sheet of Nori. Now we can go one of two ways with this particular dish. For a classic California Cream Cheese Roll you can add toasted sesame seeds on top.

To add some delicious Japanese/American fusion flare to this California Cream Cheese Roll recipe try adding Masago fish eggs to the top. I personally prefer to add Masago as I feel that it adds a unique twist to this delicious cooked sushi recipe. You can also use toasted sesame seeds to top this roll if masago is not your thing.  Press down gently on your topping and gently flip the Nori sheet over so that it is topping side down.  Lay the cream cheese, then add the fish cakes to cover the length of the Nori sheet, and gently place the sliced cucumber next to the imitation crab sticks.  Pick up the edge of the sushi mat closest to you and roll it over the roll away from you.  Press it down, roll it over again to close the California Cream Cheese Roll, pressing it down one more time to ensure a good seal.

Now I use a wet serrated knife to cut the roll. Cut the California cream cheese Roll in half, and then cut the cooked sushi in half again, and then cut those rolls in half again until you have eight beautiful pieces. Make sure to wipe your serrated knife off between cuts so that it does not tear the cooked sushi roll. Place these delicious California cream cheese Roll pieces into a beautiful pattern on a black square plate, or a festive serving tray, and voila! Easy, delicious cooked sushi that make for a gorgeous presentation at any party.
